Quick Vegetarian Rolls


Makes: 12 small rolls

  • 1 carrot

  • ½ red pepper

  • ½ courgette

  • 6 leaves of lettuce

  • 6 mint leaves, chopped

  • 1 pinch of black pepper

  • 1 tbsp soy sauce

  • 1 tbsp extra virgin olive oil

  • ½ tbsp honey

  • Juice of ½ lemon

Fresh and delicious vegetarian rolls make with only a few ingredients. It is definitely one of my favourite recipe to make when I have a few friends around and want to offer a healthier alternative to crisps or other greasy snacks.

I hope you like it, feel free to tweak the recipe to the season and to your taste!


1- Using a spiralizer (or a julienne peeler) make the courgette and carrot julienne.

2- To julienne the red pepper; cut the vegetable lengthwise on all four sides so you end up with four pieces (use only 2). Cut out rib inside. Cut the pepper into thin strips.

3- In a bowl, mix together carrot, courgette, red pepper, mint and black pepper.

4- Make the sauce: In a small bowl, whisk together soy sauce, oil, honey and lemon juice.

5- Place a lettuce leaf on a flat surface and stuff it with your vegetables. Roll the lettuce around the vegetables and cut in half. Repeat until you have done all the rolls.

Serve the spring rolls with the sauce. It is best consumed within the same day.
