Almond Chia Pudding

Almond chia pudding served with apple slices, strawberries, oats and cinnamon

Another favourite of mine, as this is a super simple recipe that is perfect for busy mornings. I make this the night before and leave it in the fridge to thicken overnight. In the morning I only have to top up the chia pudding with fruits. I love the thick, creamy consistency of the pudding and like to add cinnamon on the top for extra sweetness.

Ingredients:

  • 1 cup almond milk

  • 5 tbsp chia seeds

  • 1 tsp honey

  • 1 small apple, cored and chopped

  • 6 strawberries, cut in half

  • ½ cup porridge oats

  • 1 tsp ground cinnamon

Method:

1- In a small bowl, mix the almond milk with chia seeds and honey. Pour into breakfast bowls. Cover and leave to thicken in the fridge overnight.

2- In the morning, serve your almond chia pudding with apple slices, strawberries oats and a sprinkle of cinnamon on top.
