Vegan Apple & Banana Loaf

Eat it for breakfast with jam, as a 4pm treat with a cup of tea, or as a dessert with ice cream and berries.

 

Serves: 10

Prep: 15 min  Cook: 45 min  Total: 60 min

 

Ingredients:

2 tablespoons chia seeds

1 apple, grated

4 over-ripe bananas, mashed + 1 more to decorate (optional)

1 vanilla pod, split, seeds scraped out

300g flour  

4 tablespoons honey

200g green grapes

1 tablespoon ground cinnamon

Coconut oil, for the tin

 

 

 

Technique:

1- Preheat the oven to 190°C

2- Place the chia seeds in a small bowl with 8 tablespoons water. Set aside 10 minutes or until the water has been absorbed.

3- In a pan cook 200g green grapes with 100ml of water for about 5 minutes. Then blend quickly.

4- Mix together apple, bananas and vanilla seeds. Add you flour, honey, purée and cinnamon. Stir in the chia seeds. Let you mix sit for 10 minutes.

5- Oil the loaf tin with the coconut oil. Pour the batter into the tin. Cut the last banana in half lengthways and place it on the top, gently pressing in it.

6- Bake for 45 - 50 minutes, then allow to cool.
