BRUSSELS SPROUTS PIZZA

Brussels sprouts are still in season and here is one of my favourite ways to eat them; in pizza! 

Ingredients (serves 2):

  • 8 brussels sprouts

  • 1 pre-rolled pizza dough 

  • 3 tbsp tomato passata 

  • 1 tbsp herbes de Provence

  • 80 g minced beef

  • 50 g fresh goat cheese

  • 8 pitted black olives 

  • 1 tsp olive oil

  • Salt and pepper 

For serving:

  • ½ lettuce

  • 2 tsp balsamic vinegar

  • 2 tbsp olive oil  


Method:

Preheat the oven to 220C/200c fan/7 gas mark. Cut the brussels sprouts into thick slices and set aside. 

Roll out the pre-rolled pizza dough, and cut into one large heart shape. Take the leftover dough, stretch it out and line the pizza dough with a dough border. If you still have leftover dough, make a small pizza on the side. 

Place the dough and baking paper onto a baking tray. 

Spread the tomato passata all over the dough and sprinkle with herbes de Provence. 

Add the minced beef, goat cheese, brussels sprouts and olives. Drizzle with a little olive oil and season with a pinch of both salt and pepper. 

Bake for 16-18 minutes, or until the meat is cooked through and the pizza base is crispy. 

In the meantime, mix together the lettuce with balsamic vinegar, olive oil and a pinch of both salt and pepper. 

Enjoy warm with a side of salad.
